Bikini

Yields 10 people

Ingredients for the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (makes 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Instructions

For the Syrup: Combine the listed ingredients in a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Next, take off the heat allowing it to cool completely. Transfer into an sealable bottle, seal and refrigerate it chilled, it will last for around a month.

For the Cocktail Base: Pour all the liquid ingredients into a big jug, let it rest for 60 minutes, then strain preferably using muslin, so it's completely strained.

For serving: Add 85ml of your batch mix to a stirring glass containing ice, and agitate carefully for one minute until cold. Filter into a cold coupe glass or a similar vessel, top with the cranberries adding the final touch using a quick spritz with the mandarin essence over the top.
